English novelist Anthony Trollope once wrote that Tasmania should make jam for all the world. Henry Jones did just that, and now his iconic IXL jam factory is a world class hotel that marries 19th century industrial design with contemporary architecture and an impressive collection of Tasmanian art.

The hotel is part of a unified group of nine connected, mainly three-storey, stone warehouses with roofs, constructed from 1826 onwards. Features include arched goods entries and Georgian-style windows. Edwardian buildings comprise two cold stores and six-bay warehouse. Located in the Hunter Street precinct, the hotel blends modernity with an industrial past. Previously, the buildings housed warehouses, barracks, hotels, and a slum.

Accessibility: Stair access only. Paid meter parking is available on Hunter Street and Evans Street (Red Square) car park.
